Yup.  That's one of those cases where a the backslash escape is your friend. 
You just make a one command shell script

/path/to/configure \
--with-first-long-option="some string setting here"	\
--with-blah-blah-blah					\
--with-foo-bar-bin="some other damned string"		\
--with-metasyntactical-variable=YES			\
--with-goldurnit-running-out-of-examples		\
--enable-rolling-of-eyes				\
--enable-keeps-going-energizer-bunny

Then

sh < funkyonecommandscript > funkyonecommandscript.heartbreaklog 2>1 

Examine log.  Scratch head, read docs, ask list questions, curse.  Edit. 

Repeat.


Building CD images with mkisofs/cdrecord, I've had to resort to this
tactic to keep my sanity.

Just be *absolutely* sure that no characters, even whitespace, are to the
right of the \
